BBQ Cornbread Pie

I had some pork chops that needed to be used today. I found a recipe similar to this one that called for chicken. Here is my version:

Make one box Jiffy Cornbread mix and pour into 9" pie pan. Bake as directed.

Meanwhile cube and brown your pork (or chicken).
Add half a chopped onion (I used a sweet Vidalia)
Add a chopped green bell pepper.
Add two cloves minced garlic.
Saute until veggies are soft.
Add your choice of BBQ sauce.
Mix in hot sauce to taste.

When cornbread is done, remove from oven and top with your BBQ mixture. Top with cheddar cheese and chopped green onions.

Return to oven and bake for 10 minutes or until cheese is melted and bubbling.
