Celebrating Brian's success at work...with a new favorite meal.

Brian has been doing so well at work. Very proud of all the recognition that he is getting. It is wonderful to know that his managers and supervisors appreciate his hard work as much as I do :-)

Today he woke up early to go to the "shop." Brian and his good friend Josh have joined their new friend Jared in creating a "shop." Right now it is just a large shop space, but they hope to start an actual business at some point. They have already done work on two co-workers cars, and are slowly gaining more clients.

Our hot rods, the '33 Dodge and '36 Chrysler arrived on a hauler a few weeks ago. Brian is super excited to finally have them here in the south. The '33 still needs to be repaired from the axle braking incident that happened a while ago. The mechanical parts have been replaced, but Brian has quite a bit of body work to do and to repaint the drivers side fender. He is hoping that he can get to work on it soon and get it ready to be shown in some car shows this summer. He told me the other day that he is excited that it has seat belts, because that means he can put the carseat in it! LOL.

I have been doing more coupon shopping lately to stock our freezers before this baby comes. Last week I stocked up on meat for the freezer, at some really good prices. I bought some cube steak, which I normally make into Chicken Fried Steak (Brian's favorite.) Today I decided that I should try a new recipe. So here it is..

Cube Steak with Bacon-Mushroom Gravy 
As with most of my cooking, I didn't really use measurements. Everything can be added to taste :)


  1. Start by mixing a cup of flour with salt, pepper and garlic powder.
  2. Dredge cube steaks in flour mixture.
  3. Add enough olive oil/canola oil in a pan to almost cover the bottom. Heat to medium high.
  4. Add cube steaks to pan and cook until golden brown on both sides (~4 mins each side)
  5. Remove cube steaks and set aside.
  6. In the same pan, (do not drain oil or drippings) add 3 slices chopped bacon, one small chopped onion, and 4-6 chopped crimini mushrooms.
  7. Cook until bacon is browned and crispy. Add 2-3 tablespoons flour to pan, stir and cook for a few minutes. Next add about a cup of milk, cook until thickened, adding more milk if needed until the gravy has the right consistency. 
  8. Next add 1-2 tablespoons Worcestershire sauce, 1-2 teaspoons hot sauce, and salt and pepper to taste. (I used a little seasoned salt in this step)
  9. I served the cube steaks over white rice (we were out of potatoes) and spooned the gravy over the top, with a side of steamed broccoli.
Although not the healthiest of meals, this was delicious. I'm not usually a fan of cube steak, but the pan frying left them tender and juicy and the gravy was so yummy. I'm sure I'll be making this again, Brian has already requested it. Haha.
